It’s no secret that I’m not a huge fan of salads day after day. I enjoy a good salad, but I just cannot do them everyday for lunch. Sometimes leafy greens aren’t nice to my stomach, so instead of forcing it, I just don’t eat them all the time. But I know I need to get my veggies in, so I try to bulk up on them when I’m meal prepping.
I wanted something quick and easy to make that would last most of the week, so enter stir-fry. I used bell peppers, onions, zucchini, and yellow squash. I wanted good flavor, so I used some fajita seasoning. Cook it all in the skillet, and I was done in about 20 minutes! You could also actually make fajitas, but I will be eating mine sans tortilla.
Beef Fajita Stir-Fry
1.5 lbs of beef – I used the already sliced stir-fry beef
3 Bell Peppers – I used 2 orange and 1 red
2 medium Yellow Squash
2 medium Zucchini
1 packet of Fajita seasoning
1. Heat oil in the skillet over medium heat. I did this while I chopped everything.
2. Saute all of the veggies
3. Add in the beef and fajita seasoning with 1/3 c. of water, and cook on medium heat until beef is done to your liking. I cooked mine to about a medium doneness, knowing that I would be reheating in the microwave throughout the week.
